In the cellars of Baron Philipp de Rothschild, the harvest is then made into wine using the traditional saignée process: the grape must is left on the mash for between 12 and 24 hours to give the end product enough tannins, juicy aromas and coloring. Only by spending this longer time on the mash can enough coloring be released from the grape skins to give the wine its crisp pink-rosé color. The must is then drained. The French describe this separation of must and mash with the term "saigner", which translated into English means "bleed". The saignée process owes its name to this process. At the same time, a small proportion of the harvested grapes is immediately pressed and processed into a finely mineral and very fruity rosé wine.
