At the same time, a small proportion of the harvested grapes is immediately pressed and processed into a finely mineral and very fruity rosé wine. In order to keep the fruit aromas and fresh acidity as concise as possible, the grapes are harvested at night. The processing equipment is also kept cool and the wine is cold-filtered.
