A Chapoutier in a delicate rosé Winemaker Michel Chapoutier is not alone in his opinion that great wines are made in the vineyard and not in the cellar. However, what he brings from the slopes of the Rhône Valley and always bottles with brilliant results is unique, in this case a delicately shimmering rosé called "Belleruche". Another of Michel's rules, namely that only single-varietal wines mature into really great wines, is suspended in this rosé wine. This allows the Syrah, Cinsault and Grenache grapes to form a harmonious combination after the night-time harvest and the subsequent direct pressing. In order to preserve the aroma of the raw materials, the must ferments at a low temperature. It then matures for three to six months in stainless steel containers. In English, the French word “saigner” means something like “to bleed”. Accordingly, the mash is "bled" after the must has rested and part of the reddish must is drawn off and the rosé wine is later obtained. The "saignée" process gives the wine a more intense color than traditionally pressed wines. In addition, they are somewhat denser on the palate. In the Baron Philippe de Rothschild Bordeaux Rosé, the process results in extremely fresh fruit aromas. At the same time, a small proportion of the harvested grapes is immediately pressed and processed into a finely mineral and very fruity rosé wine.
