The grapes are pressed extremely gently and carefully without the supply of oxygen so as not to stress the berries. This process, together with the careful selection of the must and the subsequent bottling for no less than 12 hours, allows unwanted soil and plant residues to be eliminated. Fermentation takes place at a controlled temperature of 16°C in French oak barrels (part toasted, part new). This is followed by an assemblage of the two grape varieties and 8 months of fine lees aging. Later, a small proportion of white Syrah from the previous year's harvest (Vin de Reserve) is added and aged in the bottle for 20 months. The result will delight you too!
